Mix all the ingredients together for 3 minutes at low speed and then for 7 minutes at high speed.
Allow the dough to rest for 5 minutes and cut portions of preferred weight.
Form the cut dough into round balls and allow to rest for 15 minutes.
Shape as you wish and proof for 30-40 minutes.
Bake with steam at 210°C for 20 minutes.
